Now that summer is here in the Northern Hemisphere and barbecue season is beginning around here, I was just curious as to what each of you considers to be "barbecue". Is it grilling? Or a special food? Does sauce play a part?
What is barbecue to you?

I have a pretty broad definition of barbecue that some people will probably argue against, but I consider it any thing cooked on the grill.

food + grill + fire = bar-b-que.
No, sauce isn't required. I've seen all sorts of meat being barbaqued along with veggies. I think its more of a frame of mind than any one specific thing.
Athough, I think the three things I mentioned above are needed. Outside of that, you're good to go. :banana
You forgot the Beer

Nice but not required.
Dr. Pepper, RC Cola, Coke, and lemonade are hot commodities. :)

Here in the Deep South we call it grilling unless there is a tomato or mustard based sauce involved. With the sauce it is called Barbecue. The term also applies only to meats and Pork, Beef, Chicken and Turkey are the favorites. The meats can also be smoked in a smoker or cooked on a rotisserie and still be called Barbecue as long as the sauce is applied.
In California I always ran into the term of barbecuing stakes when they were doing what I call grilling, very confusing for this southern boy.
Oh Yeah any drink will do but beer is the preferred beverage of choice.
BTW http://mindscraps.com/s/contrib/tweetz/spam1.gif is good barbecued also. :thumb
You've all seen my BBQ Pic
In the UK and OZ "Grilling" is our BBQ. The smokers etc that you call BBQs are not used by us.

Agreed, if it's to be BBQ, it needs sauce. Otherwise you are broiling ("grilling," for the uninitiated).

I agree.
But it's different in each part of the country.
Here we say, we are having a barbeque, which references to an outdoor get-to-gether (a.k.a. party) where the food has been cooked on a barbeque grill. I have yet to see someone having a barbeque that everyone is coming over to rub sauce on meat....
that's called a prOn set.
Actually barbeque is in reference to cooking meat over a charcoal or wood fire on lower heat. This was used to improve the flavor of the lesser cuts of meat. Sauces and dry rubs were common to help improve the flavor, also. Where most area's tend to use sauces (varied from state to state) here in Texas, dry rubs are popular.
Now days, barbeque is more in reference to people cooking meats and veggies outdoors over charcoal, having a good time, and enjoying good company.

Lady C spent most of her formative years in North Carolina, she says grilling
A Barbeque or BarBQ is what I call it (Cowtown, Alberta)
In our household, BarBQ isn't exclusive to summer, every weekend regardless of weather I'm outside either flipping steaks (typically Friday), flipping ribs (Saturday) and Sundays are usually either hamburgers or chicken
Eating a steak after having suffered through -40C blizzard seems to add to the flavour for what ever reason, you savour it more
Beer is not out of the question even when it is -40

For me Barbecue can be used a couple different ways..
Barbecue: An outdoor party where the host is cooking something on the grill and everyone brings a potluck. ex: "Susie is having a Barbecue Saturday night...and we are to bring the Potato Salad."
Grilling: Me cooking on the grill...hot dogs, steaks, chicken...etc..
My father likes to smoke stuff too. He has a smoker..he did ribs on it over Memorial Day weekend...I like them the old fashioned way..not smoked.

Grilling: Me cooking on the grill...hot dogs, steaks, chicken...etc..
Or as I like to call it, a little taste of heaven. :heartbeat :kiss
Man I'm hungry now!
Here is the UK/Australian version of a BBQ:
Note Beer in Stubby holder and large amounts of Meat. My BBQ is a split Hotplate/grill so I get the best of both worlds

grilling, barbecuing, I don't care what it is called *just as long as they
don't forget to call me to eat when its done* hehehehehe :lmao :rofl2
I would have to say though anything that is put on the grill and cooked
without any kind of sauce is just plain old grilling. Now throw some good
ol' sauce on there and some hickory wood chips in the fire and then we
got ourselves one hum-dinger of a BBQ going on. :banana :hail :thumb

Spring Creek is a chain bbq restaurant here in DFW. Yes, I've eaten there but was not impressed. There is one located about a mile from my apt.
However, there is a bbq place called Shady Oak's off of IH35N and Western Center that has excellent bbq. :hail They bring fresh bread wrapped in a paper bag with hot (temp) bbq sauce to your table to snack on while you wait for your food. :Nice
For beef ribs, though, Riscky's.
If you're ever in this neck of the woods...errr...concrete and steel...I can point you around to all the good Mexican, BBQ, Italian, Oriental food restaurant's your heart desires. You'll go back twice the man you are now. :lmao
