Hey there everyone

Went down south a couple of days ago, and picked up some great homemade ginger beer from a fundraiser along the way.

Here's a link to a recipe I'd like to try:

But... Would this become alcoholic? :What the

I don't drink - Wouldn't be wise as I am constantly on ibuprofen.

Yes, but it won't be very strong alcohol. It would be very lemony though.

The interesting part of the recipe to me is that they use champagne yeast and pitch it at 90-100 degrees. Seems a little high to me. 58-70 is the usual range. I also think I'd use the Wehenstephaner yeast strain, or one of the Belgian ones, for this. It'd be fruitier and have more character.

But...

What you may be after isn't even brewed. From Wikipedia (http://en.wikipedia.org/wiki/Ginger_beer):
The beverage produced industrially today is often not brewed (fermented). Such ginger beer is carbonated with pressurized carbon dioxide, does not contain alcohol, and is sold as a soft drink. Ginger beer is similar to ginger ale except that it has a significantly stronger ginger taste (often described as ginger ale with a "kick" to it). Other distinctions, vis a vis ginger ale, are the cloudy appearance (which is traditional) a predominately citrus sour taste base, and the spicy ginger bite.

You can try that recipe, but it's a little vague on details. Here's (http://www.dooyoo.co.uk/food/home-brewed-beer-recipes/1007652/) a somewhat better one. And one (http://www.bbc.co.uk/dna/h2g2/A827426) from the BBC.

Some homebrewing suppliers, if anyone else is interested. They sell ginger beer kits.

Wiliams' Brewing (http://www.dooyoo.co.uk/food/home-brewed-beer-recipes/1007652/) Good people. I buy from here.
Mid-West Supplies (http://www.midwestsupplies.com/) They have a downloadable catalog to peruse at your leisure.

Well

It wasn't that great... I was making 3 litres and should probably have used a little more ginger, and maybe even extra yeast.

:o

Won't stop me from trying again though
